21/2 cups            Cooked short grain rice

4 pcs                      Mushrooms

6 stalks                 Asparagus

3 pcs                      Radish tops (thinly sliced)

50g                         Corn kernels

120g                       Salmon (bite size cubes)

100g                       Prawns (cubed)

 

Dressing

4 Tbsp                   Colavita Extra Virgin Olive Oil

1 Tbsp                   Grated Ginger

2 Tbsp                   Soy Sauce

1 Tbsp                   Lemon Juice

½ Tsp                     Black pepper

 

Garnish

White sesame seeds and finely chopped spring onions (optional)

Method

  1. Divide the rice equally into 2 bowls.
  2. Whisk all the ingredients for the dressing till well combined. Set aside
  3. Arrange the vegetables and protein onto the rice bowl and drizzle evenly with the dressing.
  4. Steam on high heat for 8 minutes, garnish and serve immediately.
