- 90g Colavita Olive Oil
- 50g Sugar
- 3 no Egg Yolks
- 1 no Egg
- 95g Self Raising flour
- 10g 137 Degrees Almond milk
- 1tsp Vanilla essence
- 2 no Egg white
- 50g Sugar
- 40g Wonderful Pistachio, Chopped
- 10g Wonderful Pistachio (garnish)

Directions
- Cream Colavita Olive Oil with sugar until pale in colour.
- Next, add in egg yolk and egg then mix well.
- Then, fold in self-raising flour, almond milk and vanilla essence. Set aside.
- In another bowl, whisk the egg white until fluffy then gradually add in sugar and whisk until medium peak.
- Fold in 1/3 of egg white mixture into batter and mix well. Fold in remaining egg white into batter and mix well.
- Toss in the pistachio and mix well.
- Pour batter into a 7 inch tin and bake in a preheated oven for 25 – 30 minutes at 160◦
