500ml                   Roi Thai Red Curry Soup

100g                      Sweet Potato (cut into wedges)

100g                      Egg Plant (cut into wedges)

100g                      Green Zucchini (cut into wedges)

100g                      Baby King Enoki Mushrooms

Juice of ½ a lime

Directions

Method:

  1. In a heavy base pot, empty the entire content of Roi Thai Red Curry Soup and bring to a gentle boil.
  2. Add in the sweet potatoes and boil for 2 minutes. Next add in the eggplant and boil a further 2 minutes. Next add in the green zucchini and the mushroom, continue to boil for another 2 minutes.
  3. Dish up, add the lime juice and serve with steamed white rice or some crusty bread.
